    Kelly's Irish Crockpot Lamb Stew

    Recipe Introduction


    As David and I are thinking about raising sheep in the next few years, I figured we'd better get used to a few lamb recipes. Here is one that I made up today. It was inspired by our trip to Europe.


    List of Ingredients


    • 1 large lamb leg steak, cut into pieces
    • one white onion, chopped OR pearl onions (more authentic)
    • small red potatoes, about 8
    • 2 cloves of garlic, chopped
    • 1 cup beef broth
    • 2 cups water
    • 2 tsp thyme
    • salt and pepper
    • 1 cup sliced mushrooms
    • 16 oz frozen baby peas
    • 1/3cup flour
    • 1 cup skim milk
    • butter and olive oil


    Instructions


    1. Brown lamb in oil and butter until brown.
    2. Add lamb, onions, potatoes, thyme, salt & pepper, garlic, water, and broth to crockpot and cook on high approx 3 hours or until veggies are tender.
    3. Add mushrooms and peas. Continue at high for 1 hour.
    4. Blend flour and milk and add to crockpot. Stir until thickening begins then cover crockpot and turn to warm until ready to serve.
