Kelly's Irish Crockpot Lamb Stew

Recipe Introduction
As David and I are thinking about raising sheep in the next few years, I figured we'd better get used to a few lamb recipes. Here is one that I made up today. It was inspired by our trip to Europe.
List of Ingredients
- 1 large lamb leg steak, cut into pieces
- one white onion, chopped OR pearl onions (more authentic)
- small red potatoes, about 8
- 2 cloves of garlic, chopped
- 1 cup beef broth
- 2 cups water
- 2 tsp thyme
- salt and pepper
- 1 cup sliced mushrooms
- 16 oz frozen baby peas
- 1/3cup flour
- 1 cup skim milk
- butter and olive oil
Instructions
- Brown lamb in oil and butter until brown.
- Add lamb, onions, potatoes, thyme, salt & pepper, garlic, water, and broth to crockpot and cook on high approx 3 hours or until veggies are tender.
- Add mushrooms and peas. Continue at high for 1 hour.
- Blend flour and milk and add to crockpot. Stir until thickening begins then cover crockpot and turn to warm until ready to serve.
