- 1/2 cup crushed macaroons
- 1/2 cup crushed toasted almonds
- 1/4 cup confectioner's sugar
- 2 Cups heavy cream
- 3 Tbs dark rum
- 3 or 4 maraschino cherries
Instructions
- Mix the macaroons, most of the almonds, the sugar and 1 cup of cream together.
- Whip the remaining cream and fold it and the rum into the first mixture, stirring gently.
- Spoon the mixture into paper muffin cups and freeze for 2 hours.
- After about 2 hours, sprinkle with remaining almonds. Put 1/2 cherry into the middle of each for decoration and return to the freezer.
- Makes 6-8 servings.
