    Zita with Broccoli

    List of Ingredients




    1 1/4 lb fresh broccoli
    8 parsley sprigs....leaves only
    2 large garlic cloves, smashed
    3/4 lb ziti
    1/4 cup olive oil
    2 T butter
    1/4 C freshly grated parmesan cheese ( a little romano or asiago is good too)
    1/2 t ground black pepper

    Recipe



    Cut stems off broccoli and wash. Chop parsley and garlic together. Steam broccoli for about 25 minutes. Cook ziti in boiling salted water for about 20 minutes or until al dente. Combine olive oil, butter, parsley and garlic. Stir to mix flavors. Warm this sauce for 2 minutes but do not cook or burn.

    Drain broccoli and ziti as soon as cooked. Place both in the hot pot the ziti was cooked in and pour the sauce mixture over both. Sprinkle on the cheese and pepper, stir and serve immediately.

    Good Italian bread and wine are necessities. Serves 4 generously.
