    Kelly's Most Requested Pasta Salad

    Recipe Introduction

    I usually have to bring 3 versions of this to any family get together -- the original, the low carb and Kammi's version. Low carb is accomplished by substituting low carb pasta and salad dressing. Kammi's version omits the celery. At times, I substitute chicken, turkey, or tuna for the ham.

    List of Ingredients

    1 box of pasta shells
    3-6 boiled eggs, chopped
    a bunch of green onions, chopped
    1 stalk celery, chopped
    diced ham
    1 carrot...either julienned or grated
    1/2 cup frozen peas, blanched
    1 scant bottle of commercial ranch or buttermilk ranch dressing
    cherry or grape tomatoes, chopped
    1 cucumber (I like the english type) chopped

    Recipe

    Boil pasta, al dente. Drain in colander and then run cold water over it until it is cool. Let drain completely. Add meat and vegetables and toss with salad dressing. Cool in the refrigerator for at least an hour to let tastes mingle. You may need to add additional dressing, as the pasta will absorb some. Add salt and pepper to taste.
