Uncle Dave's Habernero Hot Sauce

Uncle Dave had to have his arm twisted a bit to give this recipe up.
List of Ingredients
- 14 dried birdseye chiles
- 4 dried habernero chiles
- 4 cloves of garlic, minced
- 1 cup distilled white vinegar
- 7 oz sliced tomatoes
- 1 tsp black cumin
- 1 tsp curry powder
- 1 tsp allspice
- 1 tsp ginger
- 1 Tbs sugar
- 1 tsp salt
Instructions
- Rehydrate and blanche peppers in vinegar. Do NOT inhale fumes. Wear gloves while handling vinegar/pepper mix. Set aside used vinegar to use later.
- Put peppers, garlic, 1/2 cup of vinegar from blanching, tomatoes and spices in a blender or food processor. Blend at highest speed until fluid and pourable. Add vinegar if necessary.
- Pour mixture into bottles. Let sit seven days for full flavor. Keep refrigerated throughout.
