    Uncle Dave had to have his arm twisted a bit to give this recipe up.


    List of Ingredients


    • 14 dried birdseye chiles
    • 4 dried habernero chiles
    • 4 cloves of garlic, minced
    • 1 cup distilled white vinegar
    • 7 oz sliced tomatoes
    • 1 tsp black cumin
    • 1 tsp curry powder
    • 1 tsp allspice
    • 1 tsp ginger
    • 1 Tbs sugar
    • 1 tsp salt


    Instructions


    1. Rehydrate and blanche peppers in vinegar. Do NOT inhale fumes. Wear gloves while handling vinegar/pepper mix. Set aside used vinegar to use later.
    2. Put peppers, garlic, 1/2 cup of vinegar from blanching, tomatoes and spices in a blender or food processor. Blend at highest speed until fluid and pourable. Add vinegar if necessary.
    3. Pour mixture into bottles. Let sit seven days for full flavor. Keep refrigerated throughout.
