Baked Potato Soup

From one of the best cooks I've ever met.
List of Ingredients
- 4 large baking potatoes
- 2/3 cup butter
- 2/3 cup all purpose flour
- 6 cups of milk
- salt
- pepper
- 4 chopped green onions
- 12 crumbled slices of cooked bacon (I use a pkg of Hormel real bacon bits found in the meat department)
- 1 cup of shredded cheddar cheese
- 1 8 oz container of sour cream
Instructions
- Bake the potatoes ( I put them in the microwave). Cool and scoop out the pulp and set aside. Discard the skin.
- Melt butter in a heavy saucepan over low heat
- Add flour, stirring until smooth
- Gradually add milk stirring constantly. Cook over medium heat until mixture is thick and bubbly.
- Add potatoes, salt, pepper, 2 tablespoons of green onion, _ cup bacon and 1 cup of cheese. Cook until thoroughly heated
- Add Sour Cream and extra milk if you want it thinner.
- Garnish each bowl with onion, cheese and bacon. (I put all the cheese, onions and bacon in the soup pot and don’t fool with the garnish)
