    Mushroom Soup

    Recipe Introduction

    I found this recipe marking a page in a thrift store cookbook. The cookbook doesn't stand out in my mind, but this recipe does.

    List of Ingredients

    1 lb mushrooms, washed and dried
    About 6 portabello mushrooms (the recipe called for "italian" mushrooms)
    3 T olive oil
    1/4 cup butter
    2 mashed garlic cloves
    1/4 cup diced onion
    pinch of cayenne pepper
    5 cups boiling beef broth
    1/2 cup sherry
    1/2 cup heavy cream
    salt and pepper to taste

    Recipe

    Chop mushrooms and stems coarsly. Heat butter and oil together in large soup pot. Add garlic and stir then discard the garlic bits. Add onion and saute until brown. Add mushrooms and saute slowly for about 15 minutes. Add cayenne, broth and sherry. Add salt and pepper to taste. Bring to rapid boil for about 5 minutes. Remove from heat and stir in cream. Serve immediately. (4 servings)
