    Potato Leek Soup

    Adapted from traditional potato leek soup and baked potato soup


    List of Ingredients


    • 1 lb leeks cleaned and chopped....dark green section cut off
    • 4 T butter
    • 5-6 small white potatoes
    • 1 quart chicken broth
    • 1 1/2 cup heavy cream
    • 1 cup sour cream
    • salt
    • white pepper
    • green onions chopped
    • grated cheese (optional)
    • crisp bacon, crumbled


    Instructions


    1. Melt butter in heavy pan. Add leeks and sweat for 5 minutes. Lower temperature and let cook about 45 minutes or until tender. Stir occasionally.
    2. Add potatoes and broth. Cook medium for about 35 minutes or until potatoes are tender.
    3. Use a mixer, masher or immersion blender (better) to blend the ingredients. You can make it completely smooth, but I like to leave considerable amount of texture.
    4. Add creams, salt and pepper to taste.
    5. Top soup with onions, cheese and bacon if you wish.
