Savory Corn Pudding

List of Ingredients
- Fresh corn, cut from the cobs - about 2 cups
- 4 eggs, beaten
- 1 qt. milk (buttermilk if available)
- 1 jalapeño, minced
- 1 sweet onion, chopped
- salt and pepper to taste
- 8 T flour
- 4 T butter
- cheese, about 1/2 cup (any type...but cheddar or colby work well)
Instructions
- Melt butter, cook onion until soft. Cool
- Add all ingredients (except cheese) and mix well. Add to prepared casserole dish then top with cheese, stir gently.
- Back at 450 degrees for about 40-45 minutes
