    Savory Corn Pudding

    List of Ingredients


    • Fresh corn, cut from the cobs - about 2 cups
    • 4 eggs, beaten
    • 1 qt. milk (buttermilk if available)
    • 1 jalapeño, minced
    • 1 sweet onion, chopped
    • salt and pepper to taste
    • 8 T flour
    • 4 T butter
    • cheese, about 1/2 cup (any type...but cheddar or colby work well)


    Instructions


    1. Melt butter, cook onion until soft. Cool

    2. Add all ingredients (except cheese) and mix well. Add to prepared casserole dish then top with cheese, stir gently.

    3. Back at 450 degrees for about 40-45 minutes
