Sweet Potato and Apple Casserole

List of Ingredients
- 5 sweet potatoes
- 5 granny smith apples - peeled and sliced about 1/4 " thick
- mini marshmallows
- 1 cup orange juice
Instructions
- Preheat oven to 350 degrees
- Boil the potatoes, let them cool then peel and cut into slices about 1/4" thick
Use butter (or Crisco) on the interior of a casserole dish (bottom and sides)
Layer sweet potato then apple then sweet potato then apple to the top (ending with apple)
- Pour the orange juice over everything
(the level of orange juice will depend on the size of your casserole dish - not normally more than 1 cup)
Cover and cook for 1 hour
Pull the lid off, add a layer of mini-marshmallows, put back into oven so they can brown, you can put under the broiler for a quick brown
