Recipe Introduction
You can do this on the grill (hence the name) or in the oven. I usually use the oven unless it's summer & we're outside anyway. For the grill, use a disposable roasting pan large enough to accommodate all the ingredients. Use low heat & stir occasionally. For the oven, I use a 15"x9" glass roasting dish in an oven preheated to 350.
List of Ingredients
1 lb Keilbasa or whatever type of smoked sausage you like
2 broccoli crowns, washed & trimmed to florets
1 head of cauliflower, washed & trimmed to florets
2 large sweet potatoes, peeled & cut into 2" chunks
1 medium onion, quartered
Seasoned salt to taste
Recipe
Spray your dish lightly with nonstick cooking spray. Cut the sausage into eighths and add everything to the dish. Sprinkle lightly with the seasoned salt. Cover with foil & put in the oven or on the grill. This makes enough for Ronnie, Evan & I with maybe 1 serving of veggies leftover. For anymore people, increase accordingly.
I let it bake undisturbed in the oven for 1 hour. I'm not really sure about the time on the grill. When we've done it that way we're usually cooking for a lot of people, just be sure to stir it & then remove it when the veggies are the consistency you like.
In summer I add zucchini & yellow squash, but they get soft so much faster than everything else you have to leave them in large pieces. Baby carrots are good, too.
It's a quick, easy meal if you're in the mood for fresh vegetables. And since you're not adding extra grease like butter or oil it's pretty healthy!
