Grilled Sweet Peppers

I usually cook these on one side of the grill in one of those grill pans (you know, with all the holes in it) while the meat is on the other side. I get the sweet baby peppers from Sams, they are so good.
Also, just a little note about olive oil- the gold olive oil is so much better than the green colored kind (I know it calls for extra virgin oil, but I always use the gold kind. Im not sure it is as nutritious for you as the green - I really havent compared it yet, but it taste so much better, so if you like to cook with olive oil, use the gold kind, it doesnt have that unripened taste to it. Sams has the best but the only drawback is it comes in such a big container. I use it to cook with and even bake my banana bread with it. That was free-no charge for that tidbit.
List of Ingredients
2 pounds of sweet baby (small) bell peppers - red, orange yellow
3 cloves of garlic minced
1 teaspoon coarse salt
1/4 cup extra virgin olive oil
2 Tablespoons balsamic vinegar
1/2 teaspoon freshly ground black pepper
1/4 cup crumbled feta cheeseRecipe
Core, seed, and rinse peppers. Cut each pepper into fourths or smaller if you want since its going to cook in a grill pan (basket). In a large resealable plasic bag, place chopped peppers in. In a small bowl combine garlic, salt, olive oil, balsamic vinegar, and pepper. Mix well. Pour sauce over peppers in bag and shake to distribute sauce. Let it maranade for about 15 minutes or so then place in grill pan (do it over the sink because all that juice will run through and you may want to carry it to the grill on a platter or cookie sheet to keep from leaving a trail. Cook about 6 minutes turning occasionally so it wont burn, but it will charr a little on both sides. I like mine tender so I cook them a little longer, but most people dont so 6 minutes will probably be long enough for you normal people. After removing from grill and placing on a serving plate, sprinkle with feta cheese. Its ready to serve.
Note: You can marinade it for a little longer for a stronger taste if you like.
