    Fried Corn

    6 strips bacon
    1/3 cup chopped onion
    1/3 cup chopped bell pepper
    1 pkg. frozen corn -- (16 oz.)
    1 large tomato -- skinned & diced
    1/2 teaspoon salt
    1 Dash pepper
    1 teaspoon cumin

    Fry, drain and crumble bacon. Reserve 1/4 cup drippings. Sauté onion and bell pepper in 1/4 cup bacon drippings. Add corn, tomato, salt, pepper and cumin. Cook over medium heat for about 10 minutes, stirring frequently. Sprinkle bacon pieces over top and serve.
