Mozzarella Sticks

Recipe Introduction
This is one of Jessica’s favorite appetizers – and she even found a Giada recipe to go with her all Giada Italian feast she did! One of the restaurants we frequent calls these “Moose Sticks”, which has always given us the giggles (say it out loud really fast a few times – what can I say, we are silly people!). We had some leakage problems with these, but they were still wonderful. I might try an egg/flour/egg/breadcrumb dip to improve adherence. Serve with marinara.
List of Ingredients
1 ½ c. Italian-style dried breadcrumbs
1 1/3 c. freshly grated Parmesan
1 t. salt
2 (16-oz.) blocks pasteurized mozzarella, cut into 4 X ½” sticks
4 large eggs, beaten to blend
1 ½ c. vegetable oil
Recipe
Stir the bread crumbs, 1 c. of Parmesan and 1 t. salt in a medium bowl to blend. Dip the cheese in the eggs to coat completely and allow the excess egg to drip back into the bowl. Coat the cheese in the bread crumb mixture, patting to adhere and coat completely. Place the cheese sticks on a baking sheet. Repeat dipping the sticks in the egg and bread crumb mixture to coat a second time. Cover and freeze until frozen, about 2 hours or up to 2 days.
Heat the oil in a large (NON-STICK) frying pan over medium heat. Working in batches, fry the cheese until golden brown, about 1 minute per side. Transfer the fried cheese to plates. Sprinkle with the remaining Parmesan and serve w/ marinara.
