    Broiled Veal Chop Alla Fiorentina

    I sometimes find a good deal on veal chops, but they aren’t something that I make very often. I found this recipe on the Food Network website and it sounded simple. It was really good and except for the veal, called for ingredients that I tend to have on hand all the time.

    List of Ingredients




    2 (3-inch thick) veal loin chops
    2 garlic cloves, chopped
    1 teaspoon rosemary
    1 teaspoon sage
    Pinch salt and pepper
    2 ounces virgin olive oil
    4 ounces (1 stick) butter
    1 lemon, cut in half

    Recipe



    Butterfly the veal chops (if I end up with thinner ones, I skip this step). Mix up the garlic, rosemary, sage, salt, pepper and olive oil. Coat veal with the mixture and refrigerate for 2 – 3 hours, turning every so often.

    Preheat the broiler and coat the broiling pan with the butter. Broil the veal for 5 minutes per side. Place the chops on plates and pour the juices from the pan over them. Squeeze lemon on each serving.

    Serves 2.
