    Stephanie made this for breakfast during our April 2007 trip to Florida. It was originally a recipe in one of those little books that you find at the supermarket checkout. She made some adjustments and the results were fantastic. I love that you can do it ahead of time!

    List of Ingredients




    6 eggs
    3 1/2 c. milk
    1 t. salt
    1/2 t. pepper
    8 c. 1-inch cubes of bagels
    2 c. shredded Italian Blend cheese
    1/2 c. basil pesto
    1/2 c. lemon artichoke pesto
    1/2 c. chopped onion
    1/4 t. each garlic and onion powder
    1/2 c. grated Parmesan cheese

    Recipe



    Spray 13x9 inch (3 qt.) glass baking dish with cooking spray. In large bowl, beat eggs with wire whisk until foamy. Beat in milk until blended; beat in salt and pepper. Set aside.

    Place bagel cubes in baking dish. Sprinkle with Italian Blend cheese. Pour egg mixture over top, pressing lightly to moisten bread. Mix both pestos, chopped onion, and the garlic and onion powders. Using a spoon, swirl pesto through egg mixture. Sprinkle Parmesan cheese over top. Cover with plastic wrap; refrigerate at least 8 hours but no longer than 24 hours.

    Heat oven to 350 degrees. Remove plastic wrap; bake uncovered 40 – 45 minutes or until strata is puffed and knife inserted in center comes out clean. Let stand 5 minutes before serving.

    Serves 12.
