    I made this for Valentine's Day 2010. I was remembering the strawberry stuffed croissant French toast that Stephanie made for us when we visited them in Florida one time. We loved it so much that I made a banana version when we got home. For this time, I decided that I wanted to try pears. They were a great choice, not overly sweet, but very tender and flavorful. Serve with good maple syrup.

    List of Ingredients




    FRENCH TOAST:
    1 small loaf of sliced crusty bread (mine was about 1' long and 4-5" across)
    2 pears, cored and sliced
    bacon grease or butter or a mixture of both
    2/3 of an 8 oz. tub of cream cheese
    cinnamon
    sugar
    brown sugar
    toasted sliced almonds

    CUSTARD:
    1 egg
    1/2 c. milk or half-and-half
    1/8 c. sugar
    1 T. Grand Marnier or Triple Sec
    1/2 t. cinnamon
    pinch of salt

    FRENCH TOAST:
    In a saute pan, melt enough bacon grease to lightly coat the pan. Saute the pear slices until browned on both sides. Set aside (you can do this the night before and refrigerate). In a small bowl mix the cream cheese and cinnamon, brown sugar and sugar to taste. You want it faintly sweet and cinnamony, but not too strong. Spread one side of each slice of bread with a bit of the cream cheese mixture (you want enough to cover the bread and make the pear slices stick). Top half of the slices with the pears and top with the other slices to make little sandwiches.

    CUSTARD:
    Mix all the ingredients together and pour into a pie plate. Soak each 'sandwich' a couple of minutes on each side. Cook on a griddle or skillet on each side until crisp and browned. Top with maple syrup and sliced almonds.

    Serves about 4.
