    Best Chiffon Chocolate Cake

    Recipe Introduction


    This is, to my taste, the best chocolate cake I have ever tasted. It has the chocolate intensity of a brownie with the tenderness of chiffon cake. Use your favorite frosting - I confess in the 20+ years that I have been making this cake, I have yet to find the frosting that is really good enough for it; i.e. as perfect a frosting as this is a cake!


    List of Ingredients


    • 6 oz. semi sweet chocolate
    • 2 1/2 c. sifted cake flour
    • 2 t. baking soda
    • 1 t. kosher salt
    • 2 sticks sweet butter - softened
    • 2 c. sugar
    • 4 eggs - room temperature
    • 2 t. vanilla
    • 1 1/2 c. sour cream


    Instructions


    1. Preheat the oven to 350 degrees. Line the bottoms of 3 cake pans with parchment - do not grease.
    2. Melt chocolate with 3/4 c. water. Set aside.
    3. In a bowl, sift together flour, soda and salt.
    4. In a large bowl, cream butter. Add sugar gradually. Beat until fluffy. Add eggs, one at a time, beating well after each. Add chocolate and vanilla. Stir in flour mix and sour cream alternating. Start and finish with flour. Stir until smooth.
    5. Pour into pans. Rap on the counter twice.
    6. Bake 30 - 45 minutes. Cool in pans 8 minutes. Invert on racks and cool completely.
