    I have no idea where I got this recipe, but I seem to remember that it was when I was a teenager - a friend of Momma's maybe? I remember it as being really good and reading over the recipe, it sounds great. I found it doing some organizing and didn't want to lose it again.

    List of Ingredients




    9-inch pie shell, baked and cooled
    1 envelope gelatin
    1 c. sugar, separated
    1/4 t. salt
    3 eggs, separated – you will use both whites and yolks
    1/4 t. cream of tartar
    1/4 c. cold water
    1/2 c. lime juice
    1 t. grated lime zest
    Green food coloring
    1/3 c. light rum
    1/2 c. heavy cream + sugar, to taste

    Recipe



    Combine gelatin with 2/3 c. sugar, salt, egg yolks, water and lime juice in a medium saucepan. Beat well to mix. Cook over low heat, stirring, until the mixture coats the back of a spoon. Remove from heat and add zest. Tint light green with food coloring. Cool and stir in rum. Refrigerate and cool until the mixture is slightly thicker than unbeaten egg whites.

    Beat egg whites with cream of tartar to soft peaks stage. Add the 1/3 c. sugar in 1 tablespoon increments beating until stiff. Fold in the cooled and thickened gelatin mixture. Pour into pie shell and refrigerate several hours. Whip the heavy cream and sweeten to taste. Top the pie with the whipped cream and serve.
