Judy D's Chocolate Zucchini Cake

Recipe Introduction


I sent out a request for family recipes to include here at the Recipe Circus and this was one that Judy sent me.



List of Ingredients




1 3/4 cup sugar (I never use more than 1 cup)
1/2 c. soft margarine
1/2 c. oil (I use less fat & more zucchini)
2 eggs
1 tsp vanilla
1/2 cup sour milk or cream
2 1/2 cup flour
4 T. cocoa
1 tsp soda
1/2 tsp cinnamon
1/2 tsp salt
2 cup shredded zucchini (I use at least 2 1/2 cups)


Recipe



Preheat oven to 325 degrees.

Beat together the first four ingredients. Mix in the remaining ingredients. Pour into a 9x13 pan and bake for 40-50 minutes.

Judy says that she adds 1/2 to 3/4 c. chocolate chips to the mixture and when the cake comes out of the oven, she sprinkles it with an additional 1/2 c. chocolate chips and spread them when melted.
