    I haven’t made these yet, but wanted to get them on here. Years ago Grandma Jean convinced Ma to sit down and write out some favorite recipes. I’m so glad that I have these! Her instructions were a little vague for these, so I went to eGullet for some advice. As usual, the folks there came through for me. I’m quite sure that they will turn out perfectly when I make them.

    List of Ingredients




    2 c. sugar
    1/2 c. milk
    1/4 c. butter (Ma said the size of an egg)
    1 c. chopped dates (Ma said 1/2 box)
    1 c. chopped nuts (Andie at eG suggested pecans or walnuts)

    Recipe



    Mix sugar, milk and butter in a saucepan and bring to a boil. Stir until it reaches soft ball stage (235 degrees). Add the nuts and beat until it thickens. Shape into rolls (Ma says to do this on a wet cloth – not terry. HungryC at eG suggests shaping on a Silpat.) and wrap in wax paper. Refrigerate. When firm cut into pieces. That is all Ma says, but the folks at eG suggested tossing in 10X or rolling the edges in coconut to prevent stickiness.

    NOTE: there was some discussion at eG about what, actually Ma was making – was it a candy or something else. Chris A. said that if it wasn’t a candy, it didn’t need to be cooked to 235 degrees, but just until all the liquid had evaporated. That got me thinking that if I added a good amount of ground almond meal, I could have a really good cooky-type of confection.
