    White Chocolate Gumdrop Fudge

    I tried out this idea for Christmas 2009 because it was such a pretty fudge in the picture. I'm just like a monkey - fascinated by shiny things. This fudge is tooth achingly sweet and cloying. I cannot imagine anyone eating any more than one tiny piece. We are just not white chocolate people, but maybe someone else will be, so I'll save the recipe (it IS really pretty). When chopping the gumdrops, sprinkle sugar on your cutting board and drop the cut pieces in a little bowl of sugar to keep them from sticking.

    List of Ingredients




    8 oz. cream cheese
    4 c. 10X, sifted
    1 1/2 t. vanilla
    12 oz. white chocolate, chopped
    1 1/2 c. chopped gumdrops

    Recipe



    Spray a 8x8 inch pan with Pam, line bottom with parchment paper and spray paper.

    Beat cream cheese, 10X and vanilla until smooth.

    Melt white chocolate in the microwave and add to the cream cheese mixture with the gumdrops. Spread in prepared pan. Refrigerate for at least 1 hour and cut into 1-inch squares. This fudge is hard to cut, so use a VERY sharp, thin knife and rinse in hot water and wipe between cuts.

    Makes 40 pieces of fudge.
