    Great weeknight/leftover meal.


    List of Ingredients


    • 2 c. cooked beef, cubed
    • 1 (1lb. ) can whole kernel corn, drained
    • 1 (10 1/2 oz) can tomato soup
    • 1 c. shredded cheddar cheese
    • 1 T. instant minced onion
    • 1 t. chili powder, or more, to taste
    • 1 can refrigerator biscuits
    • 2 T. melted butter
    • 1/4 c. yellow cornmeal


    Instructions


    1. Preheat oven to 400 degrees.


    2. Mix all ingredients except biscuits, butter and cornmeal. Place in shallow 2 ½ qt. Casserole. Bake at 400 degrees for 10 minutes.
    3. Dip biscuits in butter, then into cornmeal. Arrange on casserole. Bake for 20 –25 minutes longer or until biscuits are golden brown.


    Final Comments


    Serves 4-6.
