    Recipe Introduction


    This recipe calls for a little tool that caramelizes the top of the dessert just prior to serving. It's a little tiny propane torch and you can get one at most cooking supply stores. If you don't want to bother with that, you can just do this step under the oven broiler, but keep an eye on them - it is pure sugar and will burn in a second!


    List of Ingredients


    • 5 egg yolks
    • 5 T. sugar
    • 1 pint heavy cream
    • 2 t. ground ginger
    • 1 T. fresh ginger - peeled and chopped
    • sugar for topping
    • GARNISH:
    • Strawberries
    • candied ginger


    Instructions


    1. Preheat oven to 350 degrees.
    2. Place cream with ground and fresh ginger in a saucepan and bring just to a boil over medium heat. Set aside.
    3. Mix the yolks and sugar together. Put a little bit of the cream into the yolks, whisking all the while. Then put this into the cream, still whisking constantly. Let the mixture cool and strain it.
    4. Divide into individual custard cups and place in a larger baking pan. Place pan in oven and fill 1/2 way up the sides of the custard cups with hot water. Bake until brulee is firm - 25 - 30 minutes. Remove from pan and cool. Refrigerate.
    5. Just before serving, sprinkle about 1 t. on top of each and caramelize with torch.
    6. Garnish with strawberries and candied ginger.
