    We had a large can of yams that was brought when we stocked up at the beginning of the pandemic in 2020. I wanted to use them and discovered that canned sweet potatoes are not bad at all fixed up. Especially if you like them really sweet! The recipes that I saw used WAY too much butter and brown sugar. The amounts I've put below are estimates based on my results. Also, as instructed by the recipes, I baked these in a casserole dish. Doing them stovetop might work better and is what I'll try next time. If you bake these, you could also add some mini marshmallows or pecans to the top.

    List of Ingredients




    2 15-oz. cans or 1 40-oz. can of Yams (Sweet potatoes)
    2 T. butter
    1/2 c. brown sugar (regular or Splenda)
    1/2 t. vanilla
    1/2 t. salt
    1/2 t. cinnamon (optional)

    Recipe



    Heat the oven to 400F. Grease a small casserole dish.

    Drain the yams and place in the casserole dish. Add the brown sugar, vanilla, salt, and cinnamon (if using). Mix well and dot with butter. Bake for 25-30 minutes until browned and bubbly.

    Serves 6.
