    Molasses Grilled London Broil w/ Summer

    Mike saw this on TV one morning and we gave it a try. The original recipe included a salad with roasted tomatoes, zucchini and peppers. We just put it on a simple tossed salad and added some bleu cheese. I think that a salad with some arugula or curly endive and a balsamic vinaigrette would have been better.

    List of Ingredients




    3 tablespoons molasses
    3 tablespoons red wine vinegar
    3 tablespoons Dijon mustard
    3 tablespoons olive oil
    2 tablespoons chopped fresh rosemary
    1 tablespoon low-sodium soy sauce
    3 cloves garlic, chopped
    One 2-pound London broil, trimmed of excess fat
    Kosher salt and freshly ground black pepper

    Recipe



    In a bowl, whisk the molasses, vinegar, mustard, olive oil, rosemary, soy sauce and garlic. Place the meat in a large ziptop bag and add the marinade. Mix well and refrigerate for 4 hours. Remove from the refrigerator at least 30 minutes before grilling.

    Heat a grill pan or grill on medium-high heat. Take the meat from the bag and drain off. Season with salt and pepper and grill on each side for 10-12 minutes. Let rest for 10 minutes and slice across the grain to serve.

    Serves 6-8
