    Sesame Chicken Salad

    List of Ingredients


    • ¼ c. rice vinegar
    • ¼ c. low sodium soy sauce
    • 2 T. creamy peanut butter
    • 1 t. dark sesame oil
    • 1 t. bottled minced fresh ginger
    • 1 t. bottled minced garlic
    • 2-½ c. chopped cooked chicken breast
    • 2 c. thinly sliced Napa cabbage
    • 1 c. red bell pepper strips
    • 1 c. fresh bean sprouts
    • 1 c. grated carrot
    • 2 T. chopped green onions
    • 1 t. toasted sesame seeds


    Instructions


    1. To prepare vinaigrette, combine first 6 ingredients, stirring with a whisk.

    2. To prepare salad, combine chicken and next 5 ingredients (through onions) in a large bowl. Drizzle with vinaigrette, tossing gently to coat. Sprinkle with sesame seeds.



    Final Comments


    Serve 4.
