    Mike found this recipe on the South Beach Diet website. It was very easy and he liked it a lot. We thought that it would be good as a soft taco filling.

    List of Ingredients




    2 teaspoon oil, olive, extra virgin
    8 ounce(s) potato(es), sweet (about 1 small), peeled and finely chopped
    1 small pepper(s), red, bell finely chopped
    2 medium scallion(s) (green onions) thinly sliced
    1/4 teaspoon salt
    1 pinch black pepper
    1 pinch thyme, dried
    1/2 pounds turkey, breast, boneless, skinless, roasted cut into 1/4" cubes (1 cup)
    • 2 tablespoon sour cream, reduced-fat

    Recipe



    Heat oil over medium heat in a large nonstick sauté pan. Sauté the sweet potato until lightly browned and slightly soft, about 5 minutes. Add the bell pepper, scallions, 2 T. water, salt, pepper and thyme. Cook until the vegetables are softened, about 5 minutes.

    Add the turkey and cook until it is heated through. Remove from heat and stir in the sour cream.

    Makes 4 half-cup servings.
