    Chili Corn Crepes

    List of Ingredients


    • 2 jalapenos - roasted, seeded and peeled
    • 4 eggs
    • 1 c. milk
    • 1/2 t. baking powder
    • 1 T. sugar
    • 1/2 bunch cilantro - chopped
    • 1/2 c. water
    • 2 t. Kosher salt
    • 1 c. cornmeal
    • 1 T. vegetable oil
    • more oil for frying


    Instructions


    1. Place all ingredients in a food processor or blender. Blend until very smooth. Let batter rest at room temperature for 30 minutes to one hour.

    2. Oil a skillet and heat on medium. When hot, add 1/4 c. batter to pan and swirl to create crepe. Cook on one side 40 seconds, turn over and cook on the other side 15 seconds. Stack between pieces of wax paper. Can store overnight.

    Makes 12 crepes.
