    Daddy's Caesar Salad

    My dad's version of a Food Network recipe by Cathy Lowe

    Recipe Introduction

    My dad is famous for his salads. And this Caesar is one of his best. This is a Caesar with 'pow'. Not for the timid, it is a strong, bold salad. Make your own croutons and this will likely be the best Caesar you've ever tasted!

    List of Ingredients

    DRESSING:
    6 cloves garlic, minced & mashed or put through a press
    1 tablespoon Dijon mustard
    1 1/2 t. Worcestershire sauce
    1 tablespoon Vinegar
    2 tablespoons mayonnaise
    1/2 cup olive oil
    Salt
    Pepper
    Lemon juice
    1 T. anchovy paste

    SALAD:
    Dole Italian lettuce blend
    McCormick Salad Supreme
    Mrs. Dash Garlic and Herb blend
    Croutons, preferably homemade
    Parmesan Cheese, to taste

    Recipe

    Combine garlic, mustard, Worcestershire, vinegar and two pinches of salt in a mini blender and mix thoroughly. Add mayonnaise and blend together. In a slow stream add olive oil through hole in lid (my mini blender doesn't have a hole in the lid so I just added a little bit at a time). Add anchovy paste.

    Season to taste with salt, pepper and lemon juice.

    Add the Salad Supreme and Mrs. Dash to lettuce blend in a bowl. Add as much dressing and Parmesan cheese as you like, tossing well. Add croutons.

    Makes 1 - 1 1/2 c. salad dressing.
