    This is a great vinegary sauce for NC bbq'd pork. I had great success cooking pork butt on our gas grill on indirect heat with hickory woodchips for hours. This sauce and "Momma's Slaw" went perfectly with it.



    List of Ingredients


    • 3 medium onions - chopped
    • 1 1/2 c. celery - chopped
    • 5 T. butter
    • 6 T. brown sugar (I used brown Sugar Twin)
    • 1 2/3 c. catsup
    • 12 T. worchestershire sauce
    • 3 c. cider vinegar
    • 3 t. molasses
    • 3 T. dry mustard
    • 1/2 t. red pepper flakes


    Instructions


    1. Saute onions and celery in butter until soft. Add rest of ingredients and simmer 30 minutes. Strain and cool.


    Final Comments


    Makes about 3 cups.
