    List of Ingredients


    • 3 - 4 Jalapenos
    • 1 T. oil
    • 3 c. heavy cream


    Instructions


    1. Preheat oven to 325 degrees.
    2. coat peppers with oil, salt and pepper. Roast in a shallow baking pan for 30 minutes, turning frequently to allow even browning. Wrap in foil and cool.
    3. In a heavy saucepan, over medium high heat, simmer the cream. Peel, seed and stem peppers under cold running water. Chop three of the peppers, reserving one, and add to heavy cream. Continue to simmer until cream has thickened, about 20 minutes. Puree cream in a blender, if desired and season with the last pepper for more heat, if desired. Taste for salt.


    Final Comments


    Makes about 2 cups.
