Kim's Banana Cream Pie

List of Ingredients
- 3/4 C Sugar
- 1/3 C Flour
- 1/4 tsp Salt
- 2 C Milk
- 3 Slightly beaten Egg Yolks
- 2 T Butter or Margarine
- 1 tsp Vanilla
- 3 sliced Bananas
- CRUST:
- 1 1/2 C fine Graham Cracker Crumbs (about 18 Crackers)
- 1/4 C Sugar
- 1/2 C Melted Butter
Instructions
- Make Crust first combining all ingredients and pressing firmly in 8 inch Pie Pan.
- Bake in 375 oven about 8 minutes or until golden brown.(I make extra graham cracker mix to sprinkle on top.
- Filling: In Saucepan combine sugar, flour and salt. Gradually stir in Milk.
- Cook and stir over medium heat till mixture boils and thickens.
- Remove from heat
- Stir small amount of hot mixture into yolks and add yolk mixture to the pan.
- Cook for 2 minutes stirring constantly
- Remove from heat and add butter and Vanilla
- Cool to room temperature (I put it in the Frig to hurry it along)
- Slice 3 Banana's into prepared pie crust and pour cooled pudding mixture over. If you made extra graham cracker crust mix crumble over the top
- Cool and serve!
