List of Ingredients
- 1 bag of frozen shredded potaotes
- 2lbs. sausage, cooked & drained
- 1/4 cup butter, melted
- 1 med. chopped onion
- 1 small can of mushrooms, chopped--optional
- salt & pepper to taste
- 1 can cream of mushrooms soup
- 1 bag of shredded cheddar cheese
- 12 eggs, beaten
Instructions
- Preheat oven to 350 degree. Melt butter and spread on bottom of 9x13 pan.
- Mix all ingredients together except eggs and spread in pan.
- Whisk all eggs in a bowl and then pour eggs over the potatoe mixture. (I poke holes in potatoe mixture so the eggs will go into it)
- Bake for 45mins-1 hour.
Final Comments
Cooking spray can be substituted for the butter. Also you can make this the night before and refrigerate it. Just add the eggs in the morning before baking.
