Sweet Potatoe Casserole

List of Ingredients
- 5 cups cooked, mashed sweet potatoes OR
- 2 (40oz) cans of sweet potatoes, in light syrup-drained
- 1/2 cup butter, melted
- 1/3 cup milk
- 3/4 cup white sugar
- 1/2 tsp. vanilla extract
- 2 eggs, beaten
- Struesel Topping
- 1 cup light brown sugar
- 1/2 cup all-purpose flour
- 1/3 cup butter
- 1 cup chopped pecans
Instructions
- Preheat oven to 350 degrees. Grease a 9x13 inch baking dish.
- In a large bowl,mix together mashed sweet potatoes, 1/2 cup butter, milk, sugar, vanilla extract, and eggs.
- I like to use my Kitchenaid mixer. I let it mix the ingredients while I make the Struesel Topping.
- Spread the sweet potatoe mixture into the prepared baking dish.
- In a small bowl, mix together brown sugar and flour. Cut in 1/3 cup of butter until mixture is crumbly, then stir in pecans.
- Sprinkle Struesel topping over the sweet potatoe mixture.
- Bake for 30-45 minutes in the preheated oven or unitl golden brown.
