    Kim's White Chicken Burritos

    List of Ingredients


    • 4-5 boneless, skinless chicken breast, cooked and chopped
    • 1 lg. jar salsa (heat according to your taste--I use medium due to kids eating it)
    • 1 bag of shredded Mexican cheese
    • 10 tortillas
    • 1 med to lg. onion, chopped fine
    • 1 stick of butter
    • 1/4 cup flour
    • 2 1/4 cups of water
    • 1 tblsp. powdered chicken bouillon
    • 8 oz. sour cream, room temperature


    Instructions


    1. Preheat the oven to 350 degree and then I put the chicken on my George Foreman grill. Next put the butter & onions in a lg. skillet and saute unitl soft. Add the flour in to absorb all the butter. Add the water and stir until smooth. Add the chicken bouillon and cook for a few minutes. Take off the heat and add the sour cream.
    2. Chop the chicken and put it in a lg. bowl and add the salsa, 1/3 of the cheese and 1 cup of the butter/onion roue. Stir well.
    3. Spray the bottom of a 9x13 pan with cooking spray and spread a couple of spoonfuls of the roue to help the burritos not stick.
    4. Hold a burrito in your left hand and spread a tsp or so of roue in it, then put a big spoonful of the chicken mixture on and roll up. Place all the burritos in the pan and then our the remaining roue on top of the burritos. Sprinkle the rest of the cheese on top and cover with tinfoil.
    5. Bake for 25-30 mins.


    Final Comments


    This takes me a while to make, approx. 30 mins. to put it together and 30 mins to bake. It gets faster after you make it a couple of times. Also I like to add chopped green oinon or black olives on the top of the cheese before I bake it just to make it look pretty and add more flavor.
