Firehouse Breakfast Casserole
10 eggs
1/2 cup each chopped onion, red pepper, green pepper, and mushrooms
2 cups milk
1 (6 oz.) box Stove Top Cornbread Stuffing Mix
1 cup shredded Cheddar Cheese
1 pound bacon, cooked crisp and crumbled
Preheat oven to 350. Grease 13x9 pan with margarine. Sprinkle the dry Stove Top stuffing mix on bottom of dish. Sprinkle 1/2 of seasoning packet over the crumbs. (the rest of the seasoning packet is not used.) In a bowl, combine eggs, veggies, and milk. Beat well. Carefully pour over bread crumbs. Bake for 45 minutes. Remove from oven and sprinkle with cheese and bacon, return to oven for additional 5 minutes.
