Banana Nut Cake
List of Ingredients
- 1/2 cup shortening
- 1 1/2 cups sugar
- 2 eggs
- 2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla
- 3/4 cup buttermilk* (see note)
- 1 cup mashed bananas (about 2 bananas)
- 1 cup chopped nuts
Instructions
- In large mixing bowl, cream shortening and sugar together.
- Blend in eggs one at a time.
- Combine flour, baking powder, baking soda, and salt.
- Blend into shortening mixture.
- Stir in vanilla and buttermilk.
- Add bananas; mix well.
- Stir in chopped nuts.
- Pour into greased and floured 9x13 pan.
- Bake at 350 degrees for 30 minutes.
- Let cool and frost with Cream cheese frosting. (I have a cream cheese frosting recipe posted with my Carrot Cake recipe).
- *Note: You can substitue the buttermilk with 3/4 cup regular milk, adding 2 Tablespoons of vinegar (let stand a few minutes).
