Chocolate Zucchini Sheet Cake
List of Ingredients
2 c. sugar
1 c. vegetable oil
3 eggs
2-1/2 c. flour
1/3 c. cocoa
1 tsp. baking soda
1/4 tsp. baking powder
1/4 tsp. salt
1/2 c. milk
2 c. shredded fresh zucchini
1 TBS. vanilla
FROSTING:
1/2 c. butter or margarine
1/4 c. cocoa
6 TBS. evaporated milk
1 lb. (4 c.) powdered sugar
1 TBS. vanilla
In large mixing bowl, combine sugar and oil.
Add eggs, one at a time, beating well after each.
Combine flour, cocoa, baking soda, baking powder and salt; gradually add to egg mixture alternately with milk.
Stir in the zucchini and vanilla.
Pour into greased 15x10x1-in. baking pan.
Bake at 375° for 25 minutes or until cake tests done.
While cake is baking, combine all frosting ingredients. Beat until smooth. Spread frosting over cake while hot. Cool on wire rack.Recipe
