Tropical Carrot Cake
List of Ingredients
- 2 cups flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon allspice
- 1/2 teaspoon salt
- 4 eggs
- 2 cups sugar
- 1 1/4 cups oil
- 2 cups grated carrots (6 med. size)
- 1 (8 oz.) can crushed pineapple, drained
- 1 cup chopped nuts
- 1 teaspoon vanilla
- CREAM CHEESE FROSTING:*
- 1/2 cup butter or margarine, softened
- 1 (8 oz.) pkg. cream cheese, softened
- 1 lb. powdered sugar
- 1 teaspoon vanilla
Instructions
- Preheat oven to 350 degrees.
- Mix dry ingredients together and set aside.
- In large bowl, beat eggs lightly.
- Gradually beat in sugar until thick and lemon colored.
- Gradually stir in oil.
- Add dry ingredients, carrots, pineapple, nuts and vanilla. Mix well.
- Pour into greased and floured 9x13-inch pan.
- Bake 55-60 minutes or until it tests done.
- For Frosting ---
- Cream butter and cream cheese.
- Add powdered sugar and vanilla.
- Beat until fluffy.
- If frosting is too thick, add small amount of milk until desired consistency.
Final Comments
*This recipe makes plenty of frosting. I like to spread it on thick. If you don't care for that much frosting, the recipe could be cut in half.
