    Tropical Carrot Cake


    List of Ingredients


    • 2 cups flour
    • 2 teaspoons baking powder
    • 1 teaspoon baking soda
    • 1 teaspoon cinnamon
    • 1/2 teaspoon nutmeg
    • 1/2 teaspoon allspice
    • 1/2 teaspoon salt
    • 4 eggs
    • 2 cups sugar
    • 1 1/4 cups oil
    • 2 cups grated carrots (6 med. size)
    • 1 (8 oz.) can crushed pineapple, drained
    • 1 cup chopped nuts
    • 1 teaspoon vanilla
    • CREAM CHEESE FROSTING:*
    • 1/2 cup butter or margarine, softened
    • 1 (8 oz.) pkg. cream cheese, softened
    • 1 lb. powdered sugar
    • 1 teaspoon vanilla


    Instructions


    1. Preheat oven to 350 degrees.

    2. Mix dry ingredients together and set aside.

    3. In large bowl, beat eggs lightly.

    4. Gradually beat in sugar until thick and lemon colored.

    5. Gradually stir in oil.

    6. Add dry ingredients, carrots, pineapple, nuts and vanilla. Mix well.

    7. Pour into greased and floured 9x13-inch pan.

    8. Bake 55-60 minutes or until it tests done.

    9. For Frosting ---

    10. Cream butter and cream cheese.

    11. Add powdered sugar and vanilla.

    12. Beat until fluffy.

    13. If frosting is too thick, add small amount of milk until desired consistency.



    Final Comments


    *This recipe makes plenty of frosting. I like to spread it on thick. If you don't care for that much frosting, the recipe could be cut in half.
