Creme DeMenthe Squares (No Bake)
Bottom Layer:
1/2 c. butter
1/2 c. cocoa
1/2 c. powdered sugar
1 egg, beaten*
1 tsp. vanilla
2 c. graham cracker crumbs
In pan, combine butter and cocoa. Heat and stir until well blended.
Remove from heat and add powdered sugar, egg and vanilla. Stir in crumbs.
*(If you're concerned about the raw egg, substitute 1/4 c. eggbeaters).
Mix well and press into bottom of 9x13 ungreased pan. Let cool completely.
Middle Layer:
1/2 c. butter
1/4 c. green Creme DeMenthe*
3 c. powdered sugar
2 tsp. dry instant vanilla pudding mix
Melt butter; let cool slightly. In small bowl, combine butter and Creme DeMenthe.
*(You may substitute milk for Creme DeMenthe and add mint extract to taste and green food coloring).
At low speed, beat in powdered sugar and pudding mix until smooth. If mixture is too thin, add more powdered sugar. (Mixture should be frosting consistency). Spread over first layer.
Chill 1 hour.
Top Layer:
1/4 c. butter
1-1/2 c. chocolate chips
Combine in small pan. Heat and stir until melted. Spread over mint layer.
Chill 30 minutes. Cut in small squares. Chill at least 1-1 1/2 more hours before removing from pan. Store in fridge.
