    Mashed Potato/ Coconut Squares

    3/4 c. cold mashed potatoes, plain ( no milk, butter or salt added)
    4 c. powdered sugar
    4 c. flaked coconut
    1 1/2 tsp. vanilla
    1/2 tsp. salt
    1 1/2 c. semi-sweet chocolate chips
    1/4 c. butter

    Recipe



    Combine mashed potatoes and powdered sugar. Stir in coconut, vanilla and salt. Blend well. Press into 9x13 pan.
    Combine chocolate chips and butter in small pan. Heat and stir until melted. Spread over coconut mixture.
    Chill several minutes until chocolate is set, then score through chocolate layer into serving size squares (96). Chill about 2 hours longer, before cutting completely through.
    Makes 96.
