    Baked Peach Pudding

    List of Ingredients




    2 c. canned sliced peaches, drained
    2 TBS. sugar
    Arrange peaches in bottom of 9-inch square pan. Sprinkle 2 TBS. sugar over peaches. Set aside.

    Batter:
    3/4 c. sugar
    1/4 c. butter, softened
    1 c. flour
    1 tsp. baking powder
    1/2 tsp. salt
    1/2 c. milk

    In mixing bowl, cream together the 3/4 c. sugar and butter.
    Stir together, the flour, baking powder and salt.
    Add to creamed mixture alternately with milk.
    Spread over peaches.

    Topping:
    1 c. sugar
    1 TBS. cornstarch
    1/4 tsp. salt
    1 c. boiling water

    Combine sugar, cornstarch and salt. Sprinkle over batter in pan.
    Pour boiling water over all. Do not stir.
    Bake at 325° for 45-50 minutes, or until done.
    Serve warm with whipped cream or ice cream.
