    Lemon Sponge Pie

    List of Ingredients

    3 TBS. butter or margarine, softened
    1 1/4 c. sugar
    4 eggs, separated
    3 TBS. flour
    dash of salt
    1 1/4 c. milk
    grated peel of 2 lemons
    1/3 c. lemon juice
    1 unbaked 9-inch pastry shell

    Recipe

    In large mixing bowl, cream together butter and sugar until fluffy. Beat in egg yolks, flour, salt, milk, lemon peel and juice.
    In small bowl with clean beaters, beat egg whites until stiff, but not dry. Fold into milk mixture. Pour into pies shell.
    Bake in 375° oven for 15 minutes; reduce heat to 300° and bake 45 minutes longer or until top is golden and knife inserted in center comes out clean. Let cool.
