Pineapple Waldorf Salad
List of Ingredients
1/2 c. walnuts coarsly chopped
1/2 c. pineapple juice, divided
2 red delicious apples, unpeeled, sliced
1 c. mini marshmallows
1 TBS. lemon juice
1 tsp. sugar
1/8 tsp. salt
3 oz. pkg. cream cheese, softened
1/2 c. whipping cream
3 c. pineapple chunks, fresh or canned
1 c. finely sliced celery
Recipe
Bake walnuts in shallow pan in 350° oven, stirring occasionally, for 15-20 min until toasted. Set aside to cool.
Combine 1/4 c. pineapple juice with apple slices in a large bowl, tossing to coat; set aside.
Combine remaining pineapple juice with marshmallows, lemon juice, sugar and salt.
Beat cream cheese until smooth. Add whipping cream and continue beating until mixture is stiff. Fold in marshmallow mixture. Drain apples; toss with toasted walnuts, pineapple chunks and celery; fold into cream cheese mixture.
Chill until ready to serve.
Makes 8 servings.
