    Stuffed pepper Soup

    2/3 c. water
    2/3 c. instant rice (dry)
    1 can (10-3/4 oz.) tomato soup
    1 c. spaghetti sauce
    1 envelope (1 oz.) dry onion soup mix
    3/4 tsp. garlic salt
    1/4 tsp. pepper
    1 small onion, chopped
    3 c. (approx. 3 medium) green peppers, cut in 3/4 inch pieces
    3 c. water
    1 lb. 'extra lean' ground beef*

    In small saucepan, bring 2/3 c. water to a boil. Remove from heat and stir in 2/3 c. rice. Cover and set aside,
    In 4 qt. saucepan, combine remaining ingredients, except ground beef. Cook, covered, on medium heat, stirring occasionally, until peppers are tender, 45 min.-1 hour.
    Pinch off teaspoon size pieces of (uncooked) ground beef and drop in simmering soup. Cover and continue cooking 20 minutes longer. Stir in prepared rice and heat thoroughly.
    Makes 6 - 12 oz. servings.
    *NOTE: Most recipes call for browning the beef first. If you use the extra lean ground beef, it's not really necessary to brown it first.
