Cowboy Potatoes
1 (30 oz.) pkg. shredded hashbrown potatoes, thawed
1 medium onion, chopped
2 tsp. Seasoned salt (or to taste)
1 c. half and half
1/2 c. butter
Shredded cheddar cheese (optional)
Combine potatoes, onion and seasoned salt. Place in sprayed 9x13 pan. Cut butter up on top of potatoes. (This can be refrigerated until ready to bake).
Pour half and half over mixture just before baking. Bake at 350° for 50 minutes, or until browned on top. Sprinkle cheese on top (if using) and bake 5 minutes longer, or until melted.
