Zucchini Stuffing Casserole
List of Ingredients
- 4 medium zucchini, sliced 1/2 inch thick (1 3/4 to 2 lb.)
- 6 Tablespoons butter (divided)
- 3/4 cup shredded carrot
- 1/2 cup chopped onion
- 2 1/4 cups herb-seasoned stuffing cubes (divided)
- 1 can Cream of Chicken or Cream of Mushroom soup, undiluted
- 1/2 cup sour cream
Instructions
- Cook zucchini in salted water until just tender; drain.
- Saute carrot and onion in 4 Tablespoons butter until tender.
- Stir in 1 1/2 cups of the stuffing cubes, soup and sour cream.
- Gently stir in zucchini.
- Spoon into 1 1/2 qt. greased casserole.
- Melt remaining 2 Tablespoons butter.
- Add remaining stuffing cubes to butter and toss gently; Sprinkle on top of casserole.
- Bake at 350 degrees for 30-40 minutes.
