    Tex Mex Black Bean Dip

    This is a great appetizer for parties....enjoy!


    List of Ingredients


    • 1 15 oz. can black beans, drained
    • 1 t. vegetable oil (canola oil is what I use)
    • 1/2 C. chopped onion
    • 2 garlic cloves, minced (if you like garlic, you can use more)
    • 1/2 C. chopped tomatoes
    • 1/3 C. mild picante sauce
    • 1/2 t. ground cumin
    • 1/2 t. chili powder
    • 1/4 C. shredded Monterey Jack cheese (you can actually use any kind of cheese you like, I use the Mexican flavored cheese)
    • 1/4 C. chopped fresh cilantro
    • 1 T. fresh lime juice (it tastes better w/ fresh limes, but you can use the bottled kind if it's easier)


    Instructions


    1. Place beans in a bowl and partially mash until chunky. Set aside.
    2. Heat oil in medium non-stick skillet.
    3. Add onion and garlic; saute 4 minutes or until tender.
    4. Add beans, tomatoes, picante sauce, cumin and chili powder. Cook 5 minutes or until blended. Stirring constantly.
    5. Remove from heat; add cheese and remaining ingredients. Stiring until cheese melts.
    6. Serve warm or at room temp. with tortilla chips.
