Stuffed Manicotti
Time consuming, but so worth it!
List of Ingredients
- 1 (8 oz.) pkg. Manicotti, uncooked
- SAUCE:
- 3/4 Lb. lean ground beef
- 1/2 cup chopped onion
- 1 clove garlic; minced
- 1 (28 oz.) can tomatoes; cut DO NOT DRAIN
- 1 (6 oz.) can tomato paste
- 1 tsp. salt
- 1 tsp. parsley flakes
- 1 tsp. basil leaves; crushed
- 1 tsp. brown sugar
- 1/2 to 1 tsp. oregano
- 1/4 tsp. pepper
- FILLING:
- 1 (16 oz.) carton ricotta cheese
- 1 egg; beaten
- 2 cups shredded mozzarella cheese
- 1 tsp. salt
- 1 tsp. parsley flakes
Instructions
- Prepare manicotti according to package directions; drain.
- For Sauce:
- In a large skillet, combine ground beef, onion and garlic. Cook until beef is browned; drain.
- Stir in tomatoes, tomato paste, salt, parsley flakes, basil, brown sugar, oregano and pepper.
- Simmer 15 to 20 minutes.
- For Filling:
- In a medium bowl, blend ricotta and egg. Stir in mozzarella, salt and parsley flakes.
- Pour one half the sauce into a 9x13" baking dish.
- Fill manicotti evenly with ricotta mixture and place in baking dish.
- Top with remaining sauce.
- Sprinkle with parmesan cheese.
- Cover and bake in a 350 degree oven until hot. (30 to 40 minutes).
